It is a wonderful, creamy cauliflower soup (no dairy) which is enlivened by golden raisins, green olives, pumpkin seeds, and peppery olive oil.
One of my favorite aspects of eating at great restaurants is the flavor combinations inspire. JolieLife recreated a lighter version of the soup. Cauliflower is a great vegetable which gets better in the cold. It contains many anti-cancer compounds and supports healthy thyroid and hormone function. One of my favorite soups to cleanse with that requires no cooking is an Avocado Arugula Soup (this can be served cold in summer). Blend 1 ripe avocado 4 cups arugula 1 1/2 cups coconut water 1/2 teaspoon sea salt juice of one lemon Blend all the ingredients together in a high speed blender until smooth.
